Since 1999, Ronan SYMONEAUX has been a researcher at Ecole Supérieure des Agricultures (ESA) in France, where he has significantly contributed to the sensory research activities of the GRAPPE research unit, encompassing both research and consulting. His work primarily focuses on developing and adapting sensory methodologies tailored for describing and evaluating the appeal of various plant-based products, including fruits and vegetables, wine, and cider. He has a keen interest in leveraging tasters’ comments and considering product-specific characteristics such as variability and seasonality in his methodological developments. Additionally, he has honed his expertise in facilitating focus groups and employing other participatory approaches. Through his extensive work, he explores the integral role of sensory tools within the innovation process.
